Cupcakes are now passé: try baking these fruity muffins for a change

Banana-Cashew Muffins

Ingredients:

1/2 cup flour

1/4 cup butter

1/4 cup powdered sugar

1/2 cup mashed banana

1/4 tsp vanilla essence

1 tsp fruit salt

2 tbsp milk

2 tbsp chopped cashew nuts

2 tbsp cooking rolled oats

For the topping: 1/4 cup chocolate chips

Method:

Sieve the flour. Cream the butter and sugar till smooth and creamy. Add the mashed banana, vanilla essence and milk and mix well. Add the cashew nuts, oats and flour and mix well. Add the fruit salt and sprinkle a little water on it. When bubbles form, mix gently. Spoon the mixture into 15 paper cups and top with chocolate chips. Microwave them in 2 batches for one minute and 30 seconds.

Apple Muffins

2 cups flour

1/2 cup sugar

3/4 cup apple juice

1/3 cup vegetable oil

1 cup apple, peeled, cored and finely diced

3 tsp baking powder

1 egg

1/4 tsp salt

1 tsp cinnamon powder

In a bowl, combine the flour, sugar, baking powder, cinnamon powder and salt. Mix well.

In a small bowl, combine apple juice, oil, and egg and blend well. Add the flour mixture and stir till the dry ingredients are mixed well. Add chopped apple and stir.

Preheat the oven to 205 C. Grease the bottom of 12 muffin cups or line with baking cups.

Bake for 22 minutes or until a toothpick inserted in the centre of muffin comes out clean. Cool for a minute before removing from the pan.

Orange Muffins

2 cups flour

1 1/2 cups sugar

1 cup vegetable oil

3 eggs

1 tsp grated orange rind

1/2 tsp baking soda

1 1/2 tsp baking powder

3 drops orange essence

Sift flour with baking powder and baking soda and keep it aside.

Beat the eggs till they are fluffy. Powder the sugar and blend it with eggs, oil and orange rind in a mixer till they are blended well and into a smooth mixture. Transfer to a bowl and add in the flour mixture.

Pour the batter into greased muffin cups and bake for 10 minutes at 150 C and at 120 C for 8 minutes or until the muffins are golden brown. 

Cherry Muffins

2 cups flour

1 1/2 cups sugar

3 eggs

1 cup vegetable oil

6-7 cherries (chopped)

1 1/2 tsp baking powder

1/2 tsp baking soda

3 drops orange essence

Sift the flour with the baking powder and baking soda. Keep it aside.

Beat the eggs till they are light and fluffy. Powder the sugar and blend it with eggs, oil and cherry pieces in the mixer and grind them till they are blended well and the mixture is smooth.

Transfer to a mixing bowl and slowly mix in the flour.

Pour the batter into greased muffin cups and bake in an oven for 10 minutes at 150 degree C and then for 8 minutes at 120 degree C or until the muffins are golden brown in colour.
