Peanut Butter Cup Truffles

Orange and Coconut Holiday Snowballs

Ingredients

250 grams vanilla biscuit crumbs

1 cup chopped pecans (walnuts will work also)

1 cup shredded coconut

3/4 cup confectioners’ sugar (icing or powdered sugar)

1/2 cup orange juice

3 tablespoons honey

Get started

1. Combine biscuit crumbs, sugar, and nuts in a large bowl.

2. Add the orange juice, and honey and mix well.

3. Shape into one inch balls and roll onto the coloured, or uncoloured shredded coconut.

( Tip ) If the coconut doesn't stick easily the balls can be lightly coated in honey and then rolled in the coconut.

Peanut Butter Cup Truffles

Ingredients

500 grams peanut butter cookies (vanilla cookies will also work)

500 grams chocolate chips

8 ounces cream cheese

4 ounces peanut butter

3/4 tablespoon shortening

1 tablespoon sprinkles (optional for top)

Get started

1. Blend the cookies in a food processor.

2. Break up the cream cheese into chunks and blend with the peanut butter, together with the biscuit crumbs in the food processor.

3. Transfer dough to another bowl.

4. Gently fold in 1/4 of the chocolate chips.

5. Make one inch sized balls and place on a cookie sheet lined with waxed paper.

6. Place in the freezer for about 30 to 40 minutes.

7. Melt the remaining chocolate chips and shortening in the microwave stirring every 30 seconds until smooth.

8. Dip the frozen balls into the melted chocolate.

9. Cover with chocolate, lift and gently tap to remove the excess chocolate.

10. Set back onto the cookie sheet.

11. Add sprinkles immediately, before the chocolate sets.

12. The chocolate will set quickly because the balls are so cold from being in the freezer.

Makes about 35 to 40 truffles

Royal Icing

Ingredients

4 cups confectioners’ sugar

6 tbs water

3 tbs meringue powder

Get started

1. Beat all ingredients at low speed for 7 to 10 minutes, or until icing forms peaks.

( Tip ) Keep icing covered with a wet kitchen towel at all times. It can dry out quickly.

( Note ) Icing will be thick once mixed to allow for the addition of food colouring, if desired. Water can be added, in small amounts, to thin the icing.
