Bidri, the Indian specialty restaurant at Hyderabad Marriott Hotel and Convention Centre is all set to grace its patrons with a new menu which serves the traditional cuisines from the kitchens of the Riyasats that ruled India for years.
The kitchen provides glimpses of the master chefs in action, preparing a variety of Indian breads or the flaring tandoor with various marinated meats getting prepared in the traditional stove. The menu features classical flavours from regions influenced by the Persian and Afghani rulers- Hyderabad, Awadh, Kashmir and Andhra. The focus is placed on retaining the way old traditions of a Riyasti Rasoi. The signatures from the menu include classics as ‘Pathar Ka Gosht’ and ‘Kache Gosht ki Biryani’ from Hyderabad; ‘Zaffrani Subz Shorba’ and ‘Rogan Josh’ from the Kashmiri region and the ‘Lucknowi Mawey ki seekh’.
To maintain a proper balance of the Riyasati kitchen the menu distinctly has four specialities. In the appetisers there is the ‘pathar ka gosht’, ‘kashmiri Sikandari raan’, ‘kukkur kant’ and ‘sigdi wale gost ke seekh’ amongst other. In the main courses they have paid attention to dishes like ‘deccani saag’, ‘siya mirch aloo’, ‘gunchao ke keema’ etc. The main courses in the veg and non-veg menu seems exhaustive.
The desserts include a selection of ‘Khubani ka meetha’, ‘Sheer Korma’ and ‘Malai Kulfis’.
