Cheese and Zucchini Savoury Muffins

Ingredients

Flour - 180 gm (1.5 cups)

Baking powder - 1 1/4 tsp

Salt - 1/2 tsp

Freshly ground pepper - 1/4 tsp

Egg - 1

Oil - 1 tbsp

Zucchini (grated) - 60 gm

Cheese (grated) - 50 gm

Milk- 110 ml

Spring onion stalks (finely chopped) - 1-2

Fresh thyme or any herb (chopped) - 1 tsp

Method

1. Preheat the oven to 170° C and grease a muffin pan.

2. Lightly squeeze the grated zucchini (you can add the water from the zucchini to the wet ingredients).

3. In a large mixing bowl, sieve the flour, baking powder, salt, pepper and set aside.

4. Whisk the milk, egg, and oil together. Add the wet ingredients to the dry ingredients and whisk until just mixed.

5. Stir in the zucchini, cheese, spring onion and thyme with a wooden spoon until evenly spread.

6. The batter will be very thick and uneven.

7. Spoon the batter into the prepared muffin pan (about 3/4 full) and bake for 30-35 minutes or until the tops are just golden and a skewer inserted in the centre comes out clean.

8. Allow the muffins to cool in the pan for at least 10 minutes before removing.

Cheese and onion bread

Ingredients

Flour - 180 gm

Sugar - 20 gm

Baking powder - 1 1/2 tsp

Salt - 1/2 tsp

Cold cheese (chopped into small

pieces) - 50 gm

Small onion (finely chopped) - 1

Egg (beaten) - 1/2 (you can substitute

egg with 15 ml curd)

Milk - 60 ml

Butter (unsalted) - 25 gms

Pepper /chilli powder - as per taste

Method

1. Preheat oven to 200°C. Line a baking tray with foil and lightly sprinkle with flour.

2. Cook the onions in one tsp of butter for 2-3 minutes.

3. Mix the flour, sugar, baking powder, and salt.

4. Add butter into the flour and mix till it resembles bread crumbs.

5. Add cheese and onion.

6. In a separate bowl, mix the egg (or curd) and milk.

7. In small quantities, gradually add the wet mixture to the dry until a sticky dough is formed.

8. Knead on a floured surface till a smooth dough is formed. Make sure there are no cracks on the dough.

9. Roll the dough into a round shape about 2 cm thick and cut into eight wedges. Place them on the prepared baking tray.

10. Brush the dough with egg or milk. Sprinkle a little cheese on top if required

11. Place in the preheated oven and bake for 35-40 minutes, or until till the crust becomes golden brown and well risen. (A skewer should come out clean when placed into the bread).

12. Serve with hot soup.
