INGREDIENTS:
(For the stuffing of bitter melon):
Bitter melon: 2 no
Minced chicken: 400 gm
Onion (chopped): 1 no
Green chillies: 2 no
Mint (chopped): 10 gm
Garam masala: 1/2 Tsp
Turmeric powder: 1/4 Tsp
Tomato (big-seedless): 1 no
Egg: 1 no
Salt: To taste
Refined oil: 70 ml
(For topping the dish):
Jeera (whole): 1/2 Tsp
Garlic (chopped): 20 gm
Onion (chopped): 1 no
Tomato (chopped): 1 no
Refined oil: 50ml
Chilli, turmeric and coriander powder: 1/4 Tsp each
Coriander leaves: For garnishing
Salt: To taste
METHOD:
Wash and cut the bitter melon in cylindrical shape and de-seed it. Sauté the onion, green chillies, mint with minced chicken. Add turmeric powder, garam masala and finally the tomato. Season with salt and cook until raw flavour goes. Stuff the chicken masala into the bitter melon and seal with the beaten egg. Deep fry in medium fire. Remove when it is golden yellow.
For topping the stuffed bitter melon:
Sauté the jeera in oil. Cook in very low medium fire. Add chopped garlic, onion, tomato and then with coriander, chilli and turmeric powder. Add little water to make a semi liquid sauce. Add salt and cook in medium fire. Remove from fire and place the stuffed chicken in bitter melon on a plate and pour this sauce over it. Garnish the dish with coriander leaves and serve hot.
