Tender Coconut Pudding
Ingredients
Tender Coconut – 1
Sugar – 1 cup
Gelatine –1 packet
Water – As required
Rosewater – 1 tsp
Cherries, tender coconut –
4-5 pieces, for garnish
Method:
Scoop out the white flesh of the tender coconut. Reserve the coconut water also. Powder the sugar finely. Blend the tender coconut, sugar and coconut water to a fine, smooth consistency.
In a pan, simmer water. In a cup, add the gelatine and 2 tbsp cold water. Let it soak for a couple of minutes. Hold the cup over the hot water carefully. Stir so that the gelatine melts.
Blend the melted gelatine with the coconut mix. Stir in the rosewater. Pour into a bowl and chill till set. When the pudding has set, garnish with tender coconut triangles and place cherries in between. Serve chilled.
Chocolate Sorbet
Ingredients
Cocoa – 1 cup
Sugar – 1 cup
Salt – 2 pinches
Boiling water
– 2 cups
Vanilla essence – 1 tsp
Method:
Combine cocoa, sugar, salt with half cup boiling water. Add the remaining water and stir over a medium flame until the mixture starts to boil. Remove from flame and add vanilla essence.
Pour into a container and freeze overnight. Scoop and serve chilled.
