Avocado is derived from the Aztec word “ahuacatl”. Avocados are the fruit of Persea americana , an evergreen tree that can grow up to a height of 65 feet. It is also known as alligator pear because of its shape and leathery appearance.
The composition of avocado is similar to that of milk. It contains a large amount of quality protein and fat compared to other fruits.
In addition, it contains vitamin A, which helps build resistance to bacterial infection.
Being rich in vitamin E, it is a good antioxidant, valuable for healthy skin. As it has high potassium content, it can be substituted for banana.
It can be used in soups, salads or salsas or eaten as a fruit.
Along with ripened papaya, it can be consumed regularly, especially by those suffering from hyperacidity, a sore stomach or ulcers.
It also helps fight bad breath and constipation.
Now, for a recipe.
Chilled Avocado & Roasted Chilli Soup
Serves: 4
Ingredients
Large avocado: 1
Fresh coriander leaves: 25gm
Lemon: 1
Salt to taste
For roasted chilli paste
Green chillies: 5
White wine vinegar: 15ml
Garlic: 1 clove
Fresh coriander leaves: 25gm
Cumin powder: 5 gm
Olive oil: 20ml
Salt to taste
Method:
For roasted chilli paste:
Slit and deseed the green chillies and roast it along with the garlic clove.
Blend the roasted chilli and garlic along with the white wine vinegar, coriander leaves, cumin powder and olive oil. Adjust seasoning.
For Avocado soup:
Wash and slit the avocado; remove the seeds and scoop out the flesh.
Add fresh coriander, lemon juice, roasted chilli paste and ice cubes, and blend it well in a blender. Adjust seasoning and serve chilled.
Garnish with a slice of avocado and a sprig of coriander.
