My Grandma's Recipe: How to make…Kandvi

Kandvi is a Gujarati snack, very tasty and light to eat. I learnt this recipe from my grandmother.

What you need

Gram flour (Besan) - 1 cup

Sour curds - 1 cup

Water - 3 cups

Green chillies, medium-sized - 2

Ginger - one inch

Salt - to taste

Coriander leaves - one small bunch

Coconut, grated – 1/2 cup

For the seasoning

Mustard - 1 tsp

Oil - 2 tsp

Cooking instructions

Mix the gram flour in sour curd.

Add water to the mixture and run it in a blender to avoid lumps.

Make a thin batter. Add salt, ginger and chilli paste to the batter.

Keep a few large stainless steel plates inverted on a table.

Pour the batter in a kadai and place on fire. Stir the batter for about 10 minutes till it thickens.

Take two table-spoons of batter and pour it on the inverted side of the plates. Take a flat ladle and spread the batter on the plate evenly into a thin layer.

Repeat the process till the batter is finished. Allow the batter to cool completely and then cut them into long strips and roll each strip separately.

Place all rolls in a flat vessel and garnish with coriander leaves and coconut gratings (optional) and season with mustard.
