What happens when a popular chef steps out from Youtube? A storm of selfie requests. When ‘Vah’ chef Sanjay Thumma was spotted at his newly-opened restaurant Indiblaze, the demand for selfies with him was as high as it was for the food. Sanjay Thumma and Vikram Simha — who call themselves ‘Spice Brothers’— established Indiblaze, the new food destination in town.

Vikram, like Sanjay, is a no-hassle chef and has made his mark at many popular chain of restaurants across the country. The two feel their food is simple but depends on now one wants to assemble it. As healthy eating and do-it-yourself style restaurants trend the world over, Hyderabad gets its own share with Indiblaze. Built on the lines of fast casual concept, this restaurant opposite Cyber Towers, Hitech City in Madhapur – is set to offer guests a new dining concept where diners make their own healthy meal, in a bowl of their choice in just two minutes. “It is a unity of fast health food dining with a chic-casual setting, explains Vikram Simha.

He elaborates, “Globally fast casual restaurants have been expanding rapidly and sales are reaching new heights. IndiBlaze is a futuristic fast casual chain of restaurants, playing host to an eclectic mix of corporate employees, young college students and families seeking affordable fast dining experiences.”

The menu is pretty simple and its highlight is the Hearty bowl, EdiBowl and Porotilla. Diners can begin by choosing either a meat or a vegetarian selection for their bowl. Following that, they have a choice of grains and pulses. Once they have decided the main aspects of their meal, they decide upon what to add to it. From sautéed vegetables to tomato salsa, a huge gamut of choices awaits them. To top it all, the range of sauces make the meal perfect.

A unique aspect to the menu is the Edibowl — an edible bowl in which your meal is served. Porotilla on the other hand is a wrap. Nothing is processed here. Right from the chicken to the sauces, everything is homemade. Also, the amount of avocado they serve is quite generous. To top it, they have the jolokia sauce, made from the famous bhoot jolokia from the northeast.

The idea to remain simple with the menu is to ensure hassle free, quick service which promises healthy eating. To sum it up. The stuffing for your meals at Indiblaze is common, what make your meal different is the wrap and the choice of spices.
