Sprouted Moong Cutlet

This dish made from sprouted green gram (moong dal) which is rich in fibre and a significant source of protein and carbohydrates. It makes for a healthy evening snack.

What you need

Sprouted green gram - 300gm

Garlic pods - 15 pods

Ginger - 1/2 an inch

Green chillies - 3-4

Aniseed - 1 tsp

Onions – 2

Masala rusks, crumbled - 1 cup

Maida - 1 tbsp

Oil - 5 tbsp

Salt – to taste

For garnishing

Carrot – 1

Onion - ½

Lemon juice - 2 tsp

Coriander leaves - a few

Cooking instructions

Soak the green gram overnight. In the next morning, drain the excess water and keep aside. The gram will sprout in about eight hours. Now, grind the sprouted gram with garlic, ginger and green chillies in a mixer. There is no need to add water. To this mixture, add the aniseed, maida (all purpose flour), finely chopped onions and salt. Then make medium-sized, flattened round shaped patties. Heat oil in a frying pan. Cover the patties with the crumbled masala rusks on either side and shallow fry them. Garnish with raw onions, grated carrots, lemon juice and coriander leaves. Serve hot with tomato ketchup.
