Ingredients: 1 small watermelon, 4 tbsp feta or any cream cheese, 1 tbsp mayonnaise, 2 tbsp virgin olive oil, mint leaves for garnishing, a pinch of crushed black pepper and toasted walnuts for garnishing
Mix the feta or cream cheese and mayonnaise together.
Cut the top and bottom of the watermelon. Place it vertical and slice the skin in a peeling motion till you get a completely shaved melon.
Cut the water melon into ½ inch discs. Using a round cutter give them an even round shape.
Place the watermelon discs on a platter and add a dollop of cream cheese.
Sprinkle some crushed black pepper, place a toasted walnut and garnish with mint.
Drizzle olive oil.
Serve it immediately.
