Mommy Style Akuri

A traditional Parsi dish comprising scrambled egg with onions, tomatoes and coriander, accompanied with buttery fried bread.

Ingredients:

Eggs – 3

Onion – 20 gms

Tomato – 20 gms

Ginger – 5 gms

Coriander – 20 gms

Coriander Powder – 5 gms

Curry Powder – 5 gms

Cumin Powder – 5 gms

Chilli Powder – 5 gms

Chilli – 5 gms

Bread – 2 no.

Oil for frying the bread

Method:

Chop onion, tomato and ginger. Lightly whisk the eggs and set aside. In a pan sauté onion, tomato and ginger. Add all the dry powders and sauté on light flame for one minute. Add the whisked eggs. Cook like scrambled egg. Add chopped coriander. Separately cut the bread into triangles and deep fry. Arrange the fried bread and serve the eggs on the side.
