Nowadays people are more health conscious and forever on the lookout for healthy food that tastes nice. One of the best options is to work sprouts into your diet.

Here are a few recipes using moong sprouts.

Moong dal sprout dosa

It's a healthy and tasty breakfast choice.

Ingredients

Green gram sprouts: 2 cups

Soaked raw rice: 1/2 cup

Green chilli: 2 or 3

Jeera: 1/2 tsp

Salt for taste

Method

Soak raw rice for half an hour. Grind all the ingredients finely in a mixer-grinder till it attains dosa consistency. Now make dosa with this batter and serve along with chutney and sambar.

Raw banana moong sprout curry

Add sprouts to whatever vegetable dish you are making to give it an extra dimension.

Ingredients

Raw banana: 2

Green gram sprouts: 1 cup

Chopped onion: 3 tsp

Chopped ginger: small piece

Chopped green chilli: 2

Chopped tomato (optional): 1

Salt as required

Coconut: 3 tsp

Oil (for seasoning): 2 tsp

Mustard seed: 1 tsp

Urad dal: 1 tsp

Curry leaves: 1 sprig

Method

Cut the raw banana into two halves. Pour water in a kadai and boil the banana along with its skin. Leave the banana to cool. Remove the skin, grate the banana and keep aside. Heat oil in a kadai.

Add mustard seeds and when it splutters add urad dal. When the urad dal turns red add chopped green chilli, ginger, onion, curry leaves and sauté. Now add tomato and cook till it becomes soft. Add the sprouts and sauté. Sprinkle a little water to cook the sprouts. Now add the grated banana and add required salt and sauté again. Mix nicely and add the grated coconut mix. Serve hot.

Sprout snack

Here is an easy-to-make snack using sprouts.

Ingredients

Green gram sprouts: 1cup

Chopped onion: 1

Grated carrot: 1 cup

Chopped ginger: 2 tsp

Chopped capsicum (green, red, yellow): 1/2 cup

Chopped tomato: 1 cup

Chopped cucumber: 1 cup

Cashew nuts (optional): a few

Groundnut (de-skinned): a few

Salt as required

Lemon juice: 1 tsp

Pepper powder: 1 tsp

Puffed rice: 1 cup

Chaat masala: 1 tsp

Method

Mix all the ingredients except puffed rice. At the time of serving add puffed rice. You can try variations of the same by omitting or a adding few ingredients. For children you can add sev and tomato sauce, sweet chutney, boiled potato and so on. If you don't want raw sprouts just steam it for three minutes and it will become soft, or microwave cook all the vegetables for one or two minutes.
