Mango freeze popsicle

With summer comes the countless varieties of mangoes. If you’re tired of eating it the plain ol’regular way, make popsicles!

What you’ll need:

Fresh mangoes — 2

Sugar — 4 tbsp

Cardamom powder — 1/2 tsp (optional)

What to do:

1. Rinse the mangoes thoroughly.

2. Peel and cut the mangoes into small bite sized pieces.

3.Add sugar and place in a blender.

4. Blend to a smooth paste.

5. Add water a bit at a time to adjust the thickness and blend again (careful not to add too much water and make it too thin).

6. Add the cardamom powder and mix.

7. Pour the mango pulp mixture into popsicle moulds and freeze for more than eight hours or over night.

8. Unmould the popsicle and enjoy!

Tip:You can use paper cups instead of popsicle molds. Just cover the top with foil and pierce through it with a popsicle stick and then proceed to freeze it.

Note: You could try other fruits as well - grapes and watermelons are a summer favourite

Smooth as a smoothie

Sit back and cool on hot days sipping the yummiest smoothies. You can try a variety of combinations and you don’t even need a lot of ingredients. Just choose your favourite fruits. Here’s a combination you could try, strawberries and bananas.

What you’ll need:

2 cups of strawberries

1 fresh banana

1 cup milk

1 cup ice

1 tbsp honey (if you want to make it sweeter)

What to do:

1. Add all the ingredients to a blender, and pulse until combined. Serve immediately.

Tip: If the smoothie is too thick, add more milk. If it is too thin, add more fruit and/or ice and blend once once again.

Note: Some other smoothie flavours you could try: mango; banana and honey; dragon fruit and yogurt; strawberry and guava; or try your own combinations and discover new flavours.

Easy breezy no-bake cheesecake

What you’ll need:

2 packets of digestive biscuits

10 or 11 tbsp melted butter (enough to mix with the biscuits)

2 tbsps sugar

1 1/4 cups condensed milk

500g cream cheese

1/4 cup fresh lemon juice

1 tsp vanilla

Toppings your choice e.g. strawberries, blueberries, mangoes, fruit crush, crushed nuts, jam (optional)

What to do:

1. Put the biscuits in a large resealable plastic bag, and crush them with a rolling pin until they become fine crumbs.

2. Pour crumbs into a medium bowl, stir in the sugar and add the butter. Stir until well combined.

3. Press the crumb mixture into a dish (make sure the base is an inch thick) and press flat. Chill the base in the freezer for least 10 minutes.

4. In the meantime, make the filling. Use an electric mixer and beat the cream cheese in a large bowl until smooth. Mix in the condensed milk a little at a time, Make sure to scrape the sides of the bowl too occasionaly.

5. Mix in the lemon juice and vanilla to the cream mixture.

6. Pour the filling on top of the base and smooth it out. Cover the dish with plastic wrap, and refrigerate until it is firm.

7. You can add the toppings you like when you are ready to serve.
