Food becomes more interesting when it is cooked with new-age technology and appliances. The effects were seen recently at the live kitchen of Miele’s experience centre in Jasola, Delhi.
The 115-year-old German company tied up with Chef Sabyasachi Gorai who used the ovens at the experience centre to prepare Indian dishes.
First came the appetiser — baked paneer kaliya. A famous Kashmiri dish, it came coated with turmeric and melted in the mouth. Bhapa paneer, cooked in a steam oven using poppy seed paste, was a dry curry preparation that had a distinct and delightful Bengali flavour.
The third chef special was chicken kosha. An oil-based preparation, the chicken was slow cooked till the gravy turned dry. It paired well with oven cooked saffron pulao. Each grain of rice was distinct and flavourful.
The Miele ovens were equipped with a ‘Food Probe’ system which tests the meat and wirelessly communicates with the oven which in turn decides the cooking time of the meat for right result. The ‘Moisture-Plus’ function of Miele oven adds the right amount of water that is needed for bread, pulao or for that matter meat — which was lusciously tender to experience.
“I save a lot of time when I use Miele appliances. For example the chicken kosha involves a lot of time over the stove, but when cooked with a Miele oven, it took me just 15-20 minutes and with the perfect amount of moisture and mellowness,” said the chef.
A cappuccino to wash down the food came from the coffee machine, which comes equipped with ‘Cup Sensor’ rim detection technology, ruling out the problem of spluttering and splashing.
“Today the world has become wireless, our appliances are loaded with software that is upgradeable. Therefore by simply attaching your appliance to a laptop you can upgrade the features and functions without the need to replace the appliance…Also these machines are like smart phones — you simply swipe, scroll and tap across the touch panel, and you’d be able to set commands and save your preferred settings,” said Dhananjay Chaturvedi, MD Miele India.
