Gourmet Grilled Cheese Sandwich

A grilled cheese sandwich never goes out of fashion. You can use different breads but here the chef uses the egg and butter rich brioche which is really tender. Additions of different kinds of cheese make it more robust.

Gourmet Grilled Cheese Sandwich

Ingredients

Brioche bread (French toast) - 2 slices

Three cheese – 30 gms

Provolone cheese – 50 gms

Caramelized onions — 30 gms

Maple syrup — 30 ml

French fries — 140 gms

Apple — 6 slices

Rosemary — 2 gms

Method

Butter one side of each bread and cook on griddle, place a slice of provolone on each bread topped with three cheeses. Place breads open face in salamander to melt the cheese thoroughly. Salamanders are kitchen devices used for broiling, browning, caramelizing, glazing, grilling and toasting.

Saute apple slices and caramelized onions with chopped rosemary and maple syrup on griddle or pan and place on top of the half sliced sandwich. Then place other half angles on top of other sandwich. Serve with fries.
