Kebabs can be made from minced or cubed vegetables, fruits, fish, or meat.
They are either barbecued or fried. They can be served as a side dish, starter, or as a snack with salad or chutney. Here are some kebab recipes:
Meat Kebabs
(serves 4-6)
Ingredients
Lemon - 1
Onion - 1
Tomato - 1
Egg - 1
Finely minced meat
- 500 gm
Coriander powder - 1 tsp
Cumin – Half tsp
Chilli powder – Half tsp
Garam masala – Half tsp
Pepper crushed –
Half tsp
Oil or ghee - 50 gm
Salt - to taste
Preparation
Preheat the grill or oven to medium.
Slice onion, lemon and tomato in rounds and keep aside.
Mix beaten egg and minced meat in a bowl. Add spices, garam masala, and salt to the above mixture and mix well. .
Apply some oil or ghee to fingers and skewers and fold meat in cigar shape on the skewers, ensuring even thickness.
Place the skewers on the pre-heated grill/oven and turn frequently so that the meat is browned evenly all over.
When Kebabs are ready slide them gently off skewers.
Serve hot with the lemon and tomato slices and onion rings arranged around them.
Fish Kebabs
Ingredients
Spring onion - 8
Firm fleshed fish fillets
(cut in to 2cm cubes)
- 700 gm
Tomato small - 4 (halved)
Mustard - 1 tbsp
Worcestershire sauce -
1 tbsp
Sunflower oil - 4 tbsp
Salt & pepper - to taste
Preparation:-
Preheat the grill to medium.
Split the spring onion into four and cut them into 4-inch pieces.
Make the marinade with crushed mustard, sauce, salt, pepper and oil.
Add fish cubes and let it marinate for half-an-hour.
Thread the fish cube, spring onion and tomato halves alternately on to a metal skewer. Arrange them on a grill rack.
Brush the Kebab with marinade and cook under the preheated grill for 6 minutes, turnover, apply marinate and cook again 4-6 minutes.
Transfer to a serving dish and serve hot.
Kebab sauce
Ingredients
Minced onion - 1 large
Mint - 5 stalls
Green chillies - 3
Ginger - 1 small piece
Lemon juice - 1 tbsp
Seedless dates - 3
Salt- to taste
Preparation
Put all ingredients in a food processor and blend it into a sauce.
Serve with Kebabs
Grilled Fruit Kebab
Ingredients
Sunflower oil - 2 tbsp
Honey - 2 tbsp
Juice and finely grated
rind of 1 lime
Pineapple -
4 rings, halved
Strawberries - 8
Apple, banana, kiwi, and mangoes peeled, cored and thickly sliced - few
Preparation
Preheat the grill to medium.
Mix the oil, honey and lime together in a shallow non-metallic dish.
Add fruits and turn to coat. Marinate for 10-20 minutes.
Thread the fruit alternately on to 4 long metal skewers, beginning with a piece of pineapple and ending with a slice of mango.
Brush with marinade and cook under the preheated hot grill, brushing frequently with the marinade for 5 minutes.
Turn the Kebabs and brush with marinade again and grill for a 5 more minutes. Serve hot.
