Grated carrot salad
Ingredients
Prep. time: 10 minutes
Serves: 4
> Grated carrot – 1 cup
> Finely chopped tomato – 1/2 cup
> Finely chopped onion – 1/2 cup
> Chopped coriander leaves – 1 tablespoon
> Chia seeds / tuka maria seeds / subza seeds – 1 tablespoon
> Lemon juice – 1 tablespoon
> Salt to taste
Method
Mix and toss the vegetables.
Add the lemon juice, salt and chia seeds to the vegetables and toss again.
Garnish with chopped coriander leaves.
