A crisp and tangy salad made out of yam

FULL OF FIBRE Yam

Yam is cultivated for its edible underground tuber. This tuber is an excellent source of B-Complex vitamins, which help in metabolic functions of the body.

Fresh yam also contains anti-oxidant vitamins, believed to have anti-ageing properties, and help build immunity and bone growth. It is also a rich source of copper, iron, phosphorus, manganese and calcium. Yam contains a lot of fibre which leaves one feeling full for a longer period, thus helping in weight management.

Crisp Yam and Bell Pepper Salad with Sweet Soy Chilli Dressing

Ingredients

Yam (cut into matchstick-size pieces): 200 gm

Oil for frying

Ginger (finely chopped): 10 gm

Onion (finely sliced), marinated with salt and lime juice: 50 gm

Lime juice (for marinating onions): 10 ml

Salt (to taste)

Coloured bell peppers (cut into thin slices): 100 gm

Ice berg lettuce (torn into small pieces): 150 gm

Pakchoy (cut into small pieces): 50 gm

Method: Wash and clean the yam. Cut into matchstick-size pieces; fry them gently in medium-hot oil till cooked and crisp. In a mixing bowl, combine all the ingredients, except the crisp yam. Add some sweet soy chilli dressing and toss. Finally, add the crisp yam juliennes and serve.

Sweet Soy Chilli Dressing

Ingredients

Sweet soy sauce: 50 ml

Fresh red chillies (thinly sliced): 15 gm

Sesame oil: 10 ml

Salad oil: 30 ml

Vinegar: 1 tbsp

Water: 2 tbsp

Honey: 4 tbsp

Lime juice: 1 tbsp

Salt (to taste)

Method: Combine all the ingredients in a bowl, mix gently with a whisk.
