School lunches need not be boring anymore. Try some of these tasty, yet healthy food

Schools have re-opened and mothers are already worrying about what to pack for lunch every day, as children get bored of eating the same food. Here are some recipes that are simple and delicious, too.

Nutella sandwich

Bread slices – 8

Nutella – 4 tbsp

Cashew nuts roasted and chopped – 10

Method

Cut the bread into roundels with a cookie cutter. Heat a tawa and roast the roundels, turning sides, till crisp. Apply Nutella evenly on all the bread slices. Sprinkle the chopped cashew nuts on top of four roundels and cover them with the remaining roundels.

Egg sandwich

Ingredients

Boiled eggs – 2

Bread slices – 4

Lettuce leaves – 2

Small onion finely chopped – 2

Parsley chopped – 1 tbsp

Processed cheese grated – 1 tbsp

Mayonnaise – 2tbsp

Pepper powder – to taste

Method

Peel and grate the egg into a bowl. Add onion chopped and cheese, parsley chopped, pepper powder, mayonnaise and mix well. Arrange two bread slices on a table and place lettuce leaf.

Spread the egg mixture thickly on each of them. Cover with the remaining two slices.

Chapathi masala noodles

Ingredients

Chapathis – 5 (cut into strips)

Onion chopped – Half cup

Capsicum chopped – Half cup

Tomato chopped – Half cup

Garlic crushed – 2 cloves

Turmeric powder – Quarter tsp

Chilli powder – Half tsp

Garam masala – Quarter tsp

Salt – to taste

Butter – 2 tbsp

Coriander leaves chopped – 1tsp

Method

Heat butter in a pan, add onion, capsicum and saute for a few minutes.

Add the crushed garlic, chopped tomatoes, turmeric powder, chilli powder, garam masala and saute for four minutes. Add salt and chapathi strips and toss well. Serve hot, garnished with coriander leaves.

Orange raisin muffins

Ingredients

Refined flour – 1 cup

Sodium bicarbonate – Quarter tsp

Butter – Half cup

Orange juice – 1tbsp

Orange skin grated – 1 tsp

Sugar – Half cup

Condensed milk – Half cup

Raisins – Quarter cup

Fresh cream – Half cup

Method

Sieve flour and sodium bicarbonate. Add cream, butter and powdered sugar. Then add orange juice, grated orange peel, condensed milk , raisins and fresh cream. Mix well and pour in the buttered muffin tins. Bake at 180 C in a pre heated oven for 15 20 minutes.

Onion Ragi Roti

Ingredients

Ragi powder – 1 cup

Onion – 1

Green chillies – 3

Ginger chopped – 1 tsp

Salt – to taste

Oil – 2 tsp

Lukewarm water – as required

Method

Add oil and water to ragi powder. Next, add chopped onion, green chillies, ginger and make a soft dough using enough water. Take small balls and spread it on a plantain leaf. Place it on a hot tawa and cook both side. Eat with onion chutney.
