Festive ambience
At the Kebab Festival balloons, streamers and colourful festoons add to the festive spirit as pop music plays in the background, and the kebabs and tikkas make their way to your table.

The buffet begins with the Kaaikari soup and the Elumbu soup (for the non-vegetarians). Starters like honey baby corn (crispy baby corn, dressed with honey and grated ginger) and veg spring roll with hot garlic sauce follow, making way for the main course.
Paneer Tikka, Aloo Tikki, spicy Imami Kebab, a comparatively milder and sumptuous Irani Kebab, the bland Tangri Kebab and Pomfret Fish are just a prelude to more delicious offerings.
Delicacies arrive at your table in the form of the piping hot saiboo vegetable (fried cauliflower, soaked in sweet and sour ginger-garlic sauce) and reshmi kebab (sugar-coated, grilled chicken). Paneer is displaced by pineapple and apple pieces in the authentic Paneer tikka recipe to result in fruit tikka.

Pepper and salted mushrooms follow, and they are followed by crispy veg wantons.
Specialities like Hara Bara Kebab, Pancha Rathna Kebab, Paneer Sheek Kebab, Khaati Rolls, Hariyaali Mushroom Tikka, Boti Kebab, Jaangelin Chicken, Triveni Kebab and Panjali Murgh Kebab are also available in the buffet. There are a variety of desserts to choose from – silken-smooth Spanish cream tarts, banana pancakes (pazhampori in a slightly different shape), blobs of tangy orange mousse, with a prominent coconut flavour, carrot halwa, gulab jamun and Shahi Tukra (deep-fried bread, floating in Rabdi and garnished with saffron and almonds).
