Get set for a golden summer

It’s officially summer, and with it comes the delectable mango. Susanna Myrtle Lazarus lists five different ways of enjoying the king of fruits

Caramelised mango & chocolate ice cream: Amadora Gourmet Ice Cream & Sorbet

This flavour, created for Cinco de Mayo this year, combines three of our favourite things: the mangoes are caramelised in butter and combined with Callebaut 55% chocolate from Belgium. Mango and chocolate is a staple blend in Mexico and has found favour in Chennai as well.

The first batch sold off in no time, but it’s back this week. Also try out the mango ice cream marbled with coconut ice cream and toasted coconut or the ice cream egg – a ball of mango ice cream encased in vanilla ice cream.

Mango crepe: Spoonbill

This French favourite has been given an Indian summer twist. A sweet, thin crepe filled with whipped cream that smothers a few mango slices, is topped with a dash of chocolate sauce. It’s not too crisp, not too soft and has the right balance of sweetness from the Banganapalli mangoes. While the number of mango pieces might be lesser than expected, the taste almost makes up for it. Other bestsellers at the restaurant this season are mango waffles and mango lassi.

Aamras: Mansukh’s

No self-respecting list on mango dishes is complete without mentioning the traditional Indian sweet, aamras. At Mansukh’s, rich Alphonso mangoes are used. A hint of saffron elevates the dish’s taste. A popular dessert in Rajasthan, Maharashtra and Gujarat, Mansukh’s version is a little too sweet for our taste and can be quite overwhelming after a few spoons. But if you have a sweet tooth, you ought to go for it. After all, good things come in small packages and this is the perfect serving for one person.

Mango Falooda: Haji Ali

Bite-sized pieces of Banganapalli mango float in this creamy concoction laced with mango syrup. A large scoop of mango ice-cream and mango-flavoured vermicelli layered with tapioca pearls and jelly and topped with nuts and tutti-frutti make this a tall glass of summery goodness. We suggest you ask for an extra spoon and straw; this one is meant to be shared. And if you’re not counting the calories, ask for the Mango Cream – mango pulp mixed with fresh cream and topped with mango pieces.

Beet, arugula and ricotta stuffed ravioli in mango chilli sauce: Seasonal Tastes, The Westin

If you’re not fond of sweet stuff, there are still ways to enjoy the fruit of the season. Thai red chillies add heat to this dish created by Chef Joseph Rathna Raj. The sauce is made by blending mangoes with olive oil and combining it with tempered Thai red chillies and garlic. The beetroot, arugula and ricotta filling is simply seasoned with salt and pepper, making the mango sauce the star of the dish.
