A healthy start

A day well begun is half won and what better way to do it than with pancakes for breakfast!

Is it just me or does breakfast seem to be the most controversial of all the meals? Some people swear its the most important one of the day, while others don’t even bother eating it. Personally, I am of the former camp. Without breakfast, I am cranky, fussy and completely ravenous by lunch time. I love breakfast, and breakfast loves me. In fact I love to try new recipes almost everyday.

Here is one that will go a long way in making the day.

Caramalised apple cinnamon pancakes

Vitals stats

Serves: Two

Preparation and cooking time: 15 to 20 minutes

Ingredients

One egg

2 tablespoon of low fat milk

1 teaspoon of peanut butter spread

1 tablespoon of Quaker oats (roasted)

1 teaspoon of cinnamon powder

1 teaspoon of grounded flax seeds

1 tablespoon of honey

Method

Beat or blend all the above ingredients in a deep bowl.

Grease a skillet nicely.

Use a spoon to pour the batter in it (you may use different shape moulds too by placing them in the pan).

It will make around four to five mini pancakes .

Place a slice of an apple over each pancake.

Flip it and let it cook for a minute till apple start to caramalised.

Sprinkle cinnamon powder over it.

Dish it out and pour honey over it and enjoy.
