Tofu time

TOFU IS becoming increasingly nowadays, made as it is of the beneficial Soya milk. Also known as bean curd in Oriental cuisine, it is a rich source of protein and is free from cholesterol. All Soya products have the ability to lower blood sugar. It is advisable to include tofu or any other Soya product at least once a week in our diet. In Indian cuisine, tofu can be used in place of the popular paneer, though its taste is slightly different. Slight modifications in the recipe may be necessary, though. Here are three recipes with tofu as the main ingredient.

Tofu Palak

(Serves four)

Ingredients

Spinach (Palak) - 3 bunches Tofu - 200g Garlic - 8 to 10 flakes. Green Chillies - 3 Cumin Seeds - 1 tsp Garam Masala - � tsp Salt to taste Oil - 30 ml

Method

1. Wash Tofu, cut into cubes and keep aside. Do not cut them too small, as the tofu will crumble.

2. Wash palak leaves. Slit green chillies, remove seeds and saut� without browning. Slice garlic.

3. Place the washed spinach in a pan, sprinkle little water and cook for 3 to 4 minutes with the lid on.

4. Grind the leaves and saut�ed green chillies in a mixer till smooth.

5. Heat oil in a pan. Add cumin seeds. When they splutter, add garlic and saut�. Add garam masala.

6. Add the ground spinach-chilli mixture and cook on gentle heat. Add water if necessary and simmer.

7. Add cubed tofu and simmer for 3 minutes. Correct seasoning.

Note

You may saut� � bunch of Coriander leaves and grind it with the palak. The gravy can be enriched by adding 50 ml of fresh cream after removing from fire.

Tofu Dry Fry

Ingredients

Tofu - 200g Crushed pepper corns - 2 tsp Cumin seeds - 1 � tsp Turmeric powder - a pinch Curry Leaves - 1 sprig Oil - 15 ml Salt - to taste

Method

1.Wash and Cut tofu into small cubes.

2. Heat oil in a pan, add cumin seeds, crushed peppercorn, turmeric powder and curry leaves.

3. Add cubed Tofu and salt. Sprinkle a little water and stir-fry for 3 minutes.

Note

If you want the dish to be spicier, increase the quantity of peppercorns.

Tofu baby corn

Ingredients

Tofu - 200g

Baby corn (small) - 10 to 12. Shallots (small onions) - 30g Garlic - 10 pods Ginger - a small piece Red Chilli paste - 1 � tsp All in one stir-fry sauce - 1 tbsp Salt - to taste Oil - 30 ml

Method

1. Wash Tofu and cut into thick strips. Quarter the baby corns lengthwise.

2. Slice shallots, garlic and ginger. Heat Oil in a pan and add onions, ginger, garlic and Red chilli paste.

3. Add quartered baby corn and stir-fry for 3 to 4 minutes. Add salt.

4. Add tofu strips and stir fry sauce. Stir for few minutes. Add 50 ml of water and cook till dry. Correct seasoning.

Note

In addition to baby corn, sliced capsicum, mushroom, par-boiled cauliflower, carrots, shelled cooked prawns, shredded half cooked chicken may be added.
