Tofu Palak

(Serves four)

Ingredients

Spinach (Palak) - 3 bunches

Tofu - 200g

Garlic - 8 to 10 flakes.

Green Chillies - 3

Cumin Seeds - 1 tsp

Garam Masala - � tsp

Salt to taste

Oil - 30 ml

Method

1. Wash Tofu, cut into cubes and keep aside. Do not cut them too small, as the tofu will crumble.

2. Wash palak leaves. Slit green chillies, remove seeds and saut� without browning. Slice garlic.

3. Place the washed spinach in a pan, sprinkle little water and cook for 3 to 4 minutes with the lid on.

4. Grind the leaves and saut�ed green chillies in a mixer till smooth.

5. Heat oil in a pan. Add cumin seeds. When they splutter, add garlic and saut�. Add garam masala.

6. Add the ground spinach-chilli mixture and cook on gentle heat. Add water if necessary and simmer.

7. Add cubed tofu and simmer for 3 minutes. Correct seasoning.

Note

You may saut� � bunch of Coriander leaves and grind it with the palak. The gravy can be enriched by adding 50 ml of fresh cream after removing from fire.
