This mutton curry has a strong Mughal influence

This red chilli mutton curry is made with Kashmir chilli powder. It is cooked in many Muslim homes in Puducherry. It has a strong Mughal influence and was brought here by the soldiers of Tipu Sultan. Red chilli mutton curry Serve 6 Time 45 minutes IngredientsMutton - 1 kg, cut in
small pieces
Ginger/garlic paste -
1 tbsp
Red chilli powder (choose the Kashmir chilli powder for the deep red colour) - 2 tbsp *
Yogurt - 250 ml
Onions - 4, cut in fine
Ghee - 2 tbsp
Cloves - 4
Cardamom - 4
Bay leaf - 1
Coriander powder -
Anis seed powder -
Turmeric - 1 tsp
Water - 1 cup
Salt MethodPressure cook (two pressures) mutton with ginger/ garlic paste and water.In a bowl mix chilli powder and yoghurt, and reserve.In a deep frying pan, heat ghee and fry onions till golden. Add cloves, cardamom and bay leaf. Fry for 3 minutes. Add coriander powder, anis seed powder and turmeric powder, and fry for 3 minutes. Add mutton without broth, fry. Add yoghurt and fry till it is absorbed. Add juice of meat. Add salt. Cook till sauce thickens. Serve piping hot with Basmati rice pulao. KETHARI SRIVANJIAM
