Puffed-up puris

When I make puris they puff up but collapse within a while. How can one ensure that the puffiness lasts for a while? The puris in the hotel retain the puffiness for quite some time.

YOU ARE not adding enough ghee to the flour before making the dough. Second, the dough is surely a soft one . Try making a stiff dough and add a little more ghee to the flour and then fry the puris.
