Masala matters

I want to know how to make masala for Muttar paneer, Aloo masala and Dum aloo.


THE MASALA for Muttar paneer is as follows: Heat oil in a kadai, add jeera seeds, chopped onions . Allow onion to brown lightly. Then add chopped ginger, garlic and green chillies a pinch of turmeric, red chilli powder, coriander powder. Cook till oil leaves the masala. Then add chopped tomatoes and cook till tomatoes are mashed fully. Add garam masala powder. This is the way the masala is made. Fry the paneer lightly, and add the green peas at the very end to retain the colour. Adjust seasoning and serve.

The masala for Dum aloo is as follows: Heat mustard oil in a kadai. Add whole garam masala

(bayleaf, cardamom, cinnamon, cloves). Add finely chopped and brown over a brisk flame. Add ginger-garlic paste, red chilli powder, coriander powder and cook. Add tomatoes and cook till they are fully mashed. Add the baby potatoes which have been parboiled and fried into this gravy. Finish with freshly chopped coriander and adjust the seasoning.

Aloo Masala is a common dish. There are as many recipes as there are chefs, but mine is as follows. Take 200 gms potatoes and peel. Cube it 1.5"*1.5" pieces. In a kadhai, heat oil. Add cumin seeds, chopped onions, and fry. Add the cubed potatoes and cook for a few minutes adding a little salt. Then add ginger-garlic paste and cook. Then add turmeric, chilli and coriander powders. Bhunno well. Then add chopped tomatoes and cook till they are completely mashed. If needed, add a little water from time to time in the cooking process. Before serving add a handful of freshly chopped coriander.
