EVENT Chef Saby ushers the guests into a whole new world of cheese

T he cheese workshop “Say(vour) cheese with Chef Saby” allowed the guests a peek at the intriguing world of cheese. At Godrej Nature's Basket store in Defence Colony, Chef Saby of Olive Bar & Kitchen shared facts, anecdotes and engaging recipes of different kinds of cheese. While learning the delicate art of cheese pairing, creating cheese platter and storing cheese, the guests also got to sample a variety of cheese.

Chef Saby also made some easy-to-recreate gourmet dishes of cheese using smoked cheese, cheddar, blue cheese, feta, chevre, and mascarpone that were available at the store. Cheese platter, paper roll with smoked cheese and asparagus, cobb salad style canapé, mile high burger with cheese melt, cheese fondue, and tartlets were innovative. Orange mascarpone mousse with honey and sticky toffee cheese with chocolate fondue were the two desserts which floored everybody. “My favourite kind of cheese is chevre goat cheese and cheese soufflé is a dish which I crave for the most. I love the aroma and flavour of different cheese”, said the chef with a gleam in his eyes.
