Nutritious delicacies

Ramzan is not just the month of day fasting. It is also the time when the focus is on nutritious delicacies.

In the north Karnataka belt, popular dishes include harees, haleem and dum biryani which were the traditional dishes of the erstwhile Hyderabad Nizam kingdom. Harees and haleem are made with ground meat and spice and take a long time to cook.

Dum biryani and tahari are prepared with rice, meat and vegetables, and hot spices. Rotis are varied — rumali, stuffed, roast and steam boiled. Fish is eaten dried, soaked in gravy, fried, or roasted with flour.

Sweets include double ka meetha or bread dipped in honey or sugar syrup, and khubani ka meetha or apricot halwa.
