Popular local items will be tweaked with global ingredients,” he says, “There will be a burst of local flavours in global recipes.”

Which means, you can try deep-fried chicken wings flavoured with curry leaves in Karaikudi style, and polish it off with chilli garlic chips; or a mutton sukka roll made with Madurai’s famous spicy, boneless mutton fry wrapped in a wheat parantha; or pepper mushroom masala stuffed in panini bread with iceberg lettuce, cheddar chips, tapioca chips and more.

“The menu is simple and our guests can visit for lunch, dinner or even high tea and snacks,” says Somasundaram, who will be on board with his staff.

The focus of the initiative is also on sustainability and the food items will be sold in containers made of bagasse and beverages will come in glass water bottles.
