There was a time when meals consisted of a healthy dose of dal and vegetables. Snacks were a hearty fruit and even those indulgent Sunday meals were rich in proteins with mothers cooking up a non-vegetarian feast. Trays of ice cubes and homemade kulfi never had to vie for space in the freezer with packs of processed meat. But then, gradually, roti sabjis made way for burgers and sausages and ready-to-eat meals replaced the good old idlis at breakfast. It is to address this very switch in eating habits and to encourage people to consume wholesome, natural foods, that Aksha Nanavati decided to launch Soul Soufflé.

“I’d returned from the U.S. last year after completing my Masters and was looking for healthy eating options in the city. But most places that offer salads still have some amount of processed ingredients in them. That’s when the idea for Soul Soufflé came about. I began conceptualising it last year and formally launched it last week,” she says.

The healthy meal delivery service has what are called Soul Boxes that are a combination of a smoothie, energy bar and salad. Currently delivered either once or thrice a week, the boxes, says Aksha, are complete meals by themselves. “Or you could consume it over the course of the day if you choose to.”

What sets them apart from other similar services, says Aksha, is the fact that they offer some unusual salad and smoothie options. “We don’t do the usual Caesar salad routine. We use ingredients like goji berries and cacao in our food, which are rather rare here. Even the greens that we use are sourced from organic farmers who grow things like arugula, rocket leaves and kale. Taste is also key. After all, everyone wants to enjoy their meal. That apart, we never use unseasonal produce; because it means fertilisers have been used,” she explains.

While currently Soul Soufflé offers only Soul Boxes on their website, they also accept phone orders for just smoothies or energy bars. The service also offers diabetic boxes and vegan options. “Considering we use a lot of nuts in our food, we encourage people to give us a meal specification if they’re allergic to something while placing the order.” With both vegetarian and non-vegetarian options, Soul Soufflé has found quite a few takers in its launch week. Deliveries are done in two windows: 7 a.m. to 10 a.m. and 1 p.m. to 4 p.m.
