These crispy tortillas topped with beans, cheese and a whole lot of veggies are full of nutrition

Mexican pizza

Ingredients

1 cup kidney beans

4 tortillas

1 cup cheese

2 tomatoes (chopped)

2 green onions (chopped)

1 green chillies, Chopped

1 tablespoon black olives, sliced

Pepper and oregano for seasoning

Salt to taste

Method

Mash the boiled kidney beans. Pre-heat oven to 350 degrees F (175 degrees C). Spread a thin layer of beans on the tortillas, followed by another layer of tortilla with vegetables (tomato, olives, onions, green chillies) and cheese. Bake the tortillas in the preheated oven for 20 to 30 minutes. Season with black pepper and oregano and serve them hot.
