Enjoy a cool sip Litchi Squash

Like mangoes, litchis are another juicy and delicious fruit that makes an appearance during summer in India. The fruit is about the size of a small plum and has a red, leathery peel that gives way to flesh that’s sweet, juicy and translucent. Litchis may be eaten as fruit or used to make delicious sherbet, squash, ice cream, pudding and fruit salad. A simple drink can be made by blending litchis in chilled water and adding sugar, salt and a few drops of lemon juice to taste. The squash may be added to ice cream, smoothies or cocktails. Homemade pulp can be stored in a glass container and frozen for further use. A few easy-to-make recipes.

Litchi Squash

Ingredients:

2 cups litchi pulp

2 cups sugar

2 cups water

1.5 tbsp lemon juice

Half tsp potassium metabisulphite

Method:

Blend the litchi and strain the juice through a sieve. Place water and sugar in a pan and stir over low heat till the sugar dissolves. Now, add lemon juice and bring to a boil. Cook for about 2-3 minutes. Take the mixture off the fire and allow it to cool. Mix the blended litchi juice and add potassium metabisulphite dissolved in one tablespoon of warm water. Store the squash in a sterilised bottle.

Litchi Yogurt

Ingredients:

250 gm of whole cream cream yogurt

2 tbsp fresh cream

1 cup litchi pulp

3 tsp sugar (adjust according to taste)

Method:

Blend litchi lightly so little chunks of the fruit are there in the mixture. In a bowl, whip together yogurt, sugar and cream. Now separate the juice from crushed litchi through a sieve. Pour the yogurt mix in a blender along with litchi juice and churn together. Freeze this mixture for an hour. Add a pinch of sugar to litchi chunks; mix and refrigerate. After an hour, transfer the yogurt mix to the blender and whip; freeze again for two hours. Now, once more pour into blender and whip. Add litchi chunks and mix with a spoon. Fill dessert bowl and freeze for a few hours. Serve chilled with topping of your choice.

Litchi Shake

Ingredients:

200 gm litchi pulp

2 glasses of chilled milk

4 tsp sugar (adjust to taste)

2tbsp vanilla ice cream

Method:

Blend together litchi pulp, sugar, ice cream and milk in a mixer. Pour it in glasses along with some crushed ice. Serve chilled.
