Ring in Yuletide with these crunchy treats

Cutter Cookies

(Makes 25 pieces)

Ingredients

Butter: 250 gm

Flour: 450 gm

Sugar: 250 gm

Egg: 1

Salt: 1/4 tsp

Vanilla: 5 ml

Method

Preheat oven to 180 degree C.

Using an electric beater or whisk, cream the butter along with the sugar till light and fluffy. Add the egg, salt and vanilla essence. Finally, add the flour in two batches and mix the dough till it comes together in your hand.

Place in an airtight bowl and refrigerate for two hours.

Prepare a tray by lightly greasing it with butter.

On a flour-dusted surface, roll out the dough till it is a quarter inch thick and cut out shapes using your favourite cutters. Place on a tray, two inches apart.

Bake at 180 degrees C for 15 minutes or till golden brown.

Variations

Add a tsp of cinnamon or lemon rind to the cookies.

Add some of your favourite food colour for a pretty palette of cookies.

Scatter some nuts, dried cranberries or raisins on top of the cookies after they have been rolled out.

For chocolate flavoured cookies, substitute 50 gm of flour with cocoa powder.

Instead of adding chocolate chips you can scatter some chopped up chocolate for a more intense burst of chocolate.

Use silver balls, royal icing or sugar flowers to decorate your cookie and make them extra special!
