New Mexico basa fish in banana leaf

A lovely basa dish where the fish is infused with the citrusy punch of the Baja marinade

New Mexico basa fish in banana leaf

Ingredients

Baja-marinated basa fish – 1 no; Banana leaf – 1; Fresh lime – one half; Parsley sprig – 1;

Method

Take a banana leaf and arrange the marinated fish.

Fold well from all sides and put it in a pan.

Cover with silver foil to avoid the banana leaf from burning.

Cook the fish with the pan in the pizza oven for seven minutes.

After that check the doneness of the fish and cook for another one minute if required.

Once done, carefully place the basa on one side of platter plate.

Garnish with half a lemon and parsley sprig.

Serve hot with appropriate sides.
