Strawberries are in season. And it is just the right time for some easy-to-make cheesecake. Here's a two in one dessert just for you!
Strawberry cheesecake
Ingredients:
> Digestive Biscuits - 4 nos.
> Fresh Strawberries - 1 pack
> Whipping cream - 1 cup
> Sugar - 2 tbsp (add more, if required)
Method:
Crush biscuits and fill the bottom layer in the glasses or jars. Press it well and refrigerate.
Puree strawberries with sugar and cool it. Beat the cream until soft peaks form using a hand blender or whisker and cool it.
Add 3/4 portion of strawberry puree to the cream. Mix well and fill the glass. This will be the second layer. Chill it until it is firm.
Add the leftover strawberry layer.
Chill the glasses or jars for four hours or more. Serve garnished with fresh strawberry and mint leaves.
