Feel the heat: Chcolate lava cake.

Chocolate lava cake offers an explosion of sweet flavours and is easy to make.

Chocolate lava cake

Ingredients:

> Semi-sweet baking chocolate – 4 ounces or 113 grams

> Butter – 4 ounces (113g)

> Eggs – 2

> Sugar – 1/3 cup (75 g)

> All-purpose flour – 1/4 cup (40g)

> Butter – for greasing ramekins (small glass/porcelain bowls)

Method:

In a double boiler, melt the chocolate. A double boiler consists of a bowl placed on top of a pan of simmering water. The bowl does not touch the water, but creates a seal with the bottom pan to trap the steam produced by the simmering water.

In a medium mixing bowl, beat eggs and sugar until light and fluffy.

Once the chocolate is melted, remove pan from the heat and add the butter. Mix until the butter melts.

Add the chocolate-butter mixture into the eggs, add all-purpose flour and mix until well blended.

Butter the base and sides of ramekins and pour in the mixture about 3/4 way full.

Place ramekins on a baking tray and bake at 350º Fahrenheit (180º C) for 10-15 minutes. Bake for a shorter time if you want the inside to be gooey (molten). If not, bake for a longer time.

Serve hot with vanilla ice cream.
