Simple and fun: Turn out tasty dishes

This summer let's try to make food interesting, colourful and healthy. Lets try out some simple recipes. Ideal for packing in picnic baskets or when inviting friends home. Do take tips from elders at home to make it more interesting.

Chilli paneer and baby corn wrap

Preparation time: 5 minutes, cooking time: 5min.

Makes 4 wraps

Ingredients

4 Whole wheat chapattis

For chilli paneer and baby corn filling you need:

one cup low fat paneer, cut into small cubes.

one cup baby corn, boiled and cut into small pieces

Half cup chopped spring onion whites.

Half tsp chopped celery.

two - three green chillies, finely chopped.

Half tsp chopped ginger.

Half tsp chopped garlic.

Half cup chopped capsicum.

Half cup finely chopped spring onion green.

2 tsp oil.

For Soya Sauce mixture

1 tsp soya sauce

1 tsp cornflour

Half tsp sugar

Salt and pepper to taste

Half cup water

Method: Heat oil in a non stick pan, add spring onion whites and sauté for two minutes till the onions turn translucent. Add the celery, green chillies, garlic and ginger and cook for another minute.

Add the capsicum, paneer, baby corn and soya sauce mixture and cook for two minutes till the sauce thickens and coats the vegetables and paneer. Add spring onion greens, mix well and keep aside. Divide the filling mixture into four equal parts.

Spread one portion of the filling in the centre of each chapatti and roll up tightly. Before serving, warm the rolls on tava and serve.

Baked Palak Methi Puris

Preparation time: 10 minute, Baking time: 15min.

Makes 12 puris

Ingredients:

One cup chopped palak

One cup chopped methi

One cup Jowar flour

One cup bajra flour

Two tbsp. atta

Two tbsp. low fat curd

One tsp. ginger garlic paste

One tsp oil

Salt to taste

Method: Combine palak and methi, add salt and allow to rest for 10 minutes, so that the water is released.

Use this water to bind the puri dough. Add all the other ingredients and knead into soft dough, using a little water if required. Divide the dough into 12 portions and roll out each portion into a thin puri. Prick the puris with a fork at regular intervals. Bake in a pre-heated oven at 180 degree centigrade for 10-12 minutes. or till the puris are golden brown. Store in air-tight container.

Fruit wonder

Ingredients:

Four crushed biscuits(Digestive/ Marie)

Two cups mixed fruits, cubed (apple, banana, pineapple, grapes, oranges)

Two tbsp set jelly, finely chopped

One tbsp sliced almonds

For the custard sauce:

One cup low fat milk

Two tsp sugar

Two level tsp custard powder

Few drops of vanilla essence

Method: Put milk to boil with sugar. Mix custard pwd. With 1 tbsp of cold milk and stir continuously for half a minutes till it becomes thick.

Cool, add vanilla essence and chill. In a tall glass put half the crushed biscuits, top it with half the chopped fruits, and then with half cup custard. Garnish it with 1 tbsp of chopped jelly and sliced almonds and serve chilled.

Rich flap jacks

Preparation time: 10 minutes, Baking time: 25 minutes.

Makes 12 pieces

Ingredients:

One cup low fat butter, softened

One cup brown sugar

Two cups rolled quick cooking oats

A pinch of salt

Method: Mix butter, sugar and salt and beat well using wooden spoon till it is soft and fluffy. Add the oats and mix well.

Grease a shallow 175mm square tin & press the mixture evenly into the tin. Bake in a pre-heated oven at 200 degree centigrade for 15-20 minutes.

Cool slightly in the tin. Cut into square piecess.
