Apple cake in a bowl

Ingredients

Egg - 1

Sugar - ¾ cup

Cinnamon - 1 tsp

Oil - ¼ cup

Gala Or Fuji apples - 2 medium

Flour - 1 cup

Baking powder - 1 tsp

Method

1. Preheat oven to 170c°.

2. Sieve together the baking powder and flour.

3. In a large bowl, mix the eggs, sugar, cinnamon and oil.

4. Peel and slice the apples and add to mixture in bowl

5. Now add the flour to the ingredients in the bowl. Mix well (best with a fork) until all of the flour is absorbed by the wet ingredients.

6. Pour mixture into a greased pan. Bake for approximately 40- 45 minutes

Apple sauce (Home-made sauce)

Ingredients

Apples - 4 large

Zest and juice - 1-2 lemons, rind grated and juiced

Water - 2 tbsp

Sugar - 2 tbsp

Cinnamon - 1/8 tsp

Method

1. Peel, core and chop apples.

2. Combine apple, 2 tablespoons lemon juice and 2 tablespoons water and cinnamon in a saucepan. Bring to the boil over medium heat. Cover and cook for 12 to 15 minutes or until apples soften.

3. Stir in lemon rind and sugar. Allow to cool slightly.

4. Transfer mixture to a food processor and puree until smooth.

5. Serve warm or cold with ice cream, as bread and biscuit toppings, or just on its own.

Can be stored in the fridge for up to a month
