Cakey Doughnuts

Ingredients

Flour - 100 gm

Baking powder - ½ tsp

Baking soda - ¼ tsp

Curd - 120 ml.

Salt - 1/8 tsp

Powdered Sugar - 50 gm

Oil - 60 ml

Vanilla essence - 1 tsp

Lemon essence - 3 to 4 drops

Method

Preheat oven to 170°C.

1. Sieve flour, baking soda, and powder.

2. Put curd in a basin with essence and salt; whisk slowly, adding the sugar till it dissolves.

3. Add oil to the curd and continue to whisk till well blended.

4. Mix in the sieved flour.

5. Put into small oiled ring moulds. Bake at 170°C for 15-20 minutes.

6. Remove from mould and dip in chocolate sauce or any other flavoured sauce.

Italian Biscuits

Ingredients

Flour - 350 gm

Baking powder - 2 tsp

Oil - 85 ml

Powdered sugar -150 gm

Egg - 2

Vanilla - 2 tsp

Aniseed powder - 1tsp

Salt - ½ tsp

Almond flakes - 25 gm

Method

Preheat the oven to 180°C.

1. Sieve flour and baking powder.

2. Whisk egg with sugar, vanilla and aniseed. Add sugar and oil and continue to whisk till pale.

3. Add sieved flour to the liquid and make a dough.

4. Sprinkle the almond flakes on your work surface and roll the dough on it, till its incorporated and you get a cylindrical shape, 2-3 inches in diameter.

5. Place rolled dough on an oiled tray; bake for 25-30 minutes or till set and golden brown.

6. Remove from oven, cool for 15-20 minutes and slice into pieces of ½ inch thickness. Place the slices back on the tray and bake for another 15-20 minutes till dry.

7. Cool and store in airtight containers.
