With summer almost upon us, it is time to hit the salad bar. But, wait how about a cookie to pass the time?

Caramel cornflake cookies

Ingredients

Butter - 60 gm

Brown sugar - 25 gm

Castor sugar - 25 gm

Flour - 35 gm

Baking powder - ½ tsp

Salt - a pinch

Coconut - 25 gm

Cornflakes - 50gm

Peanuts (unsalted) chopped - 30 gm

Egg - ½ beaten

Method

1. Sieve flour, baking powder and salt.

2. Combine sugars and butter in a pan

over a low flame till sugar dissolve.

3. Cool mixture and add egg.

4. Add sieved flour and the rest of the

ingredients.

5. Drop spoonfuls on a greased pan

and bake at 150° C. until light brown.

Panzanella

(Pronounced: pahn-zah-NEHL-lah)

History : An Tuscan salad that probably was an invented out of necessity. A rustic dish, originally made in people’s homes. It is believed that the dish developed out of the custom of country folk to soak their old, stale bread in water and mix it with vegetables from the garden.

Ingredients

Old Bread, thickly sliced - 1/2 a loaf

Basil - 6 leave

Tomatoes, deseeded, and sliced - 2

Small red onion, sliced - 1

Small cucumber, sliced - 1

Tuna fish or any other variety, boiled

and flaked - 50 gm

Or Diced paneer - 50 gms

Minced parsley (Optional)

Hard boiled eggs, cut in eight - 1 or 2

Vinegar to taste - ½ tsp

Olive oil - 2 tbsp

Salt and pepper - To taste

Method

1. Tear the bread into pieces and toast

it slightly.

2. Put the bread in a salad bowl and

mix with the remaining ingredients.
