TIRUCHI: The tasty and traditional recipes of Tamil Nadu seem to be a forgotten thing these days what with the arrival of "new age cuisine." In a move to bring the past glory under limelight, Jenneys Academy of Tourism and Hotel Management and South India Culinary Association organised a culinary competition, `Chef Nall Amudhu' here on Friday.

Students from 20 catering colleges from across the State participated in the contest and prepared a variety of food, which many would not have heard of. Parandi Thuvial, ellu rotti, avarapu payasam, era kossthu perital were some of the items they prepared. As recipe books are not available for making such a food fare, the students visited some of the villages in the State and heard them out.

"The reason why our traditional food has been forgotten is because we don't have any recipe books. Even now, in many villages, people still make these food and that's the reason why we made the students visit those places and learn from them," says M. Pon. Ilango, Director (Technical), Jenneys Academy.

He says the academy has planned to make the competition is an annual event, which not only makes the younger generation aware of the traditional food but also enables in compiling all the recipes in the form of a book.

The general secretary, Indian Federation of Culinary Association, P. Soundararajan, said demand for south Indian recipes was increasing worldwide. "With the availability of a variety of dishes, these traditional food items will become popular around the world."

Bar élan

Bar flair is de rigueur in the western countries where the bartender does all sorts of tricks with liquor bottles to entertain the people and serve them with a well-prepared cocktail. A competition was also held in bartending, which saw active participation of students from the colleges. Rohan, who runs a school of bartending in Chennai, was the judge for the event.

VLB Janakiammal College, Coimbatore, won the overall championship, while MGR Institute of Hotel management, Chennai, finished second. The Vice-Chancellor of Tamil University, Thanjavur, C. Subramaniam, gave away the prizes.
