People in the city generally do not prefer strong flavours in cakes. Hence, Planet Fun has decided to prepare Christmas cake mixture only two weeks ahead of the D-Day.
At a special Christmas cake mixing ceremony organised on Thursday, Planet Fun chef Rajendra Prasad said, “Usually, the mixture is prepared two to three months in advance so that rum gets induced properly into the mixture. We have prepared the mixture later than other bakeries in order to reduce the rum flavour to suit the tastes of the people of Vijayawada,” he told The Hindu .
This would reduce the overpower of rum in the cake, he said. A 15 kg mixture of dry fruits was prepared by the staff and put aside till Christmas. The mixture would be stored at room temperature till Christmas and used in the preparation of fruit cakes, said the chef.
The mixture was made of candied fruit and nuts such as raisins, cranberries, prunes, dates, cherries, almonds, pistachios, cashews, and walnuts with spices such as cinnamon, nutmeg, cloves, and ground ginger along with alcohol.
“Soaking the mixture properly at least two weeks before is very important to bake a delicious moist cake,” said Mr. Rajendra Prasad.
“The mixture will be used in preparation of fruit cakes to be baked on the occasion of Christmas and put on sale,” said Planet Fun director R. Srinivas.
They also offer cakes of different varieties with tailor-made icing and garnishing.
