French beans with bacon

Four strips bacon chopped

One cup chopped onion

Two cups tomato blanched, peeled and seeded

One teaspoon minced garlic. Half tsp. chilli flakes

500 gm tender beans, cut into 5 cm pieces

In a large skillet, fry bacon till crisp and remove. Reserve two tsp. of dripping. Cook onions in the dripping until tender, add garlic and chilli flakes and fry for a minute. Add tomato and salt and cook until the moisture evaporates. Cook beans in salted water till crisp and tender; drain. Transfer to the serving bowl and top the beans with tomato-bacon mixture.
