Simnel cake

Alight fruit cake made on the fourth Sunday of Lent, it remains a British tradition where daughters take the day off to take a cake home to their mothers. After World War I, the cake became part of Easter tradition. It is made with two layers of marzipan and decorated with eleven marzipan balls, representing Jesus’ disciples minus Judas. The word simila means ‘fine white flour’ in Latin.
