Food from Emilia-Romagna in Italy at Radisson hotel brings variety to the table
Italian cuisine is not just restricted to pastas and pizzas. The Radisson hotel near Mahipalpur in Delhi has something new to offer to Italian food lovers of the city. It is hosting the Italian food festival, Festa Italiana, at its restaurant Italia, along with the Italian Trade Commission. The festival will conclude this coming Sunday. The items in the menu come from the Emilia-Romagna region in Northern Italy. According to Executive Chef Sudipto Bhattacharya, Emilia-Romagna has a very long history of civilisations, which makes it even more interesting for the culinary platter. The reason for so many varieties of cuisine is that it is made up of two areas, Emilia, the area between the Po Valley and northern Tuscany, and Romagna, the mountainous country.
The festival has in all 40 dishes on offer and everyday it has a select menu. "Ingredients like pastas, mushrooms, salmon have been flown in from Italy for the original flavours," says the chef. The highlights of the cuisine are signature ingredients from different places, like Prosciutto from Parma, Balsamic vinegar from Modena and others. The menu provides ample varieties of starters. For the main course, there are dishes like gli asparagi luovo strapazzato e il porcini (steamed asparagus), malfati di ricotta e spinaci (ricotta cheese and spinach dumplings) for the vegetarians. Non-vegetarians should not miss costelette d'agnello alle mele (roasted lamb chops) and cipollata con patate (chicken broth soup). For dessert, there is mascarpone della cesarina (vanilla sponge layered with fresh fruits and mascarpone cream) and crostata di limone (lemon tart). Though one may have to shell out a lot for such a gastronomic experience, the pleasures of fine dining make it worthwhile.
