Tomato burfi

Preparation time: 5 min Cooking time: 30 min Ingredients: Red tomatoes: 1 kg Sugar: 1 kg
Milk: 300 to 400ml
Cashew nuts: 50 gm
Desiccated coconut: 50 gm
Method:Wash and cut tomatoes into pieces. Boil them in a cup of water. Cool and crush them with hand or with the help of a mixer and then filter it. Now prepare thick sugar syrup by adding a little water to it. Pour milk and tomato juice in it. Stir well and boil the syrup so as to melt the sugar. As it becomes thick spread it evenly on a greased thali (plate using ghee so that it doesn't stick to the vessel) and add crushed cashew nuts and spread desiccated coconut on it. Allow it to cool and then cut them as you like into pieces (square would be attractive). Decorate with cashew and almond nuts as a topping.Prabha RambaoreBarkatpuraCongratulations Prabha Rambaore!
