If you are a lover of Rajasthani cuisine, Tandoor, a restaurant that specialises in north Indian food, is having a Rajasthani food festival till July 14 (Mondays to Fridays), 7.30 p.m. to 11 p.m.Chef Amar Singh from Udaipur, who has worked in royal kitchens across the state has come up with a delicious spread. A characteristic feature of the Rajasthani cuisine is the liberal use of milk, butter milk and desi ghee due to shortage of water. Also fresh green vegetables are used less and spices more. At the a la carte festival, you can savour mattar potli, makki ki dane, sabudane ke pakode, besan ke gate, kadhi pakode, dal bati churma, papad ki subzi, aam ka pulao, lahsoon ka pulao, bajre ki roti, murgh ke sooley, lal mans, Jodhpuri murgh masala and sweet dishes such as malpuva, ghevar and aloo ka seera.
