Have pineapple as cake, dessert and drink
This yellow tropical fruit- sweet- smelling and succulent , is readily available - both fresh and tinned. A few quick and easy recipes for that luscious fresh-fruit dessert or drink .
Pineapple cake surpriseIngredients
Pineapple slices- 1 tin, with sugar syrup
Sponge cake – 1.
Whipped cream – one and a half cups
Glace` Cherries- 50 gms, chopped
Candied peel/Tutti- frutti - 50 gms
Caramelised cashew nuts- 75 gmsMethod:
Carefully halve the sponge cake into 2 layers. Place the top layer aside. Arrange the pineapple slices on the open surface of the bottom layer. Pour the pineapple-syrup over this. Let it soak for half an hour. Refrigerate for 20 mins. Layer with half of the cream, caramelised nuts and chopped cherries. Place the second cake layer on top. Spread the remaining cream. Decorate with candied peel, tutti-frutti, caramelised nuts and cherries. Chill for 2 hours. Serve cold.
Pineapple jelly crystals- 1 pkt
Milkmaid – 1 tin
Cream- 1 medium tin (Approx. 250 gms)
Sweet pineapple slices- 8 – 10 slices, cubed.
Caramelised cashew nuts.Method
Dissolve pineapple jelly crystals in 1 cup hot water. Add 1 cup cold water .Stir well. Freeze and set for 1 hour. Combine set jelly, milkmaid, cream and some pineapple slices in a blender till smooth. Transfer this into a pudding bowl. Stir in pineapple cubes. Freeze for 2 to 3 hours. Top with pineapple pieces and caramelised nuts. Serve cold.
Makes a single glassIngredients
Pineapple juice- 75 ml
Pineapple cubes- 4 or 5 nos.
Cold milk- 100 ml
Sugar – 2 tblsp
Combine pineapple juice, pineapple pieces, cold milk , sugar and ice cubes in blender. Blend until smooth. Pour into a serving glass and enjoy.PARVATHY MENON
